Spain's summer chest: the gazpacho

Again, here are the intens heat, who want to be cooking in the kitchen? The best solution now a fast made spanish soup, called gazpacho. It need fresh vegetables, some stale bread, and a good blender! Video after the recipe!

Why this soup really great? Made from fresh vegetables without cooking, so all the vitamins and nutrients preserved. You can use unlimited number of toppings, you can do it bread cubes, boiled eggs, finely sliced fried meat, chopped onion, or maybe cheese. Everyone can choose according to their own tastes.

Ingredients for 4 person

  • 1 big cucumber
  • 4 - 5 tomatoes
  • 2 spring onions
  • 1 big bell pepper
  • 2 - 3 staled white bread
  • 150 - 200 ml olive oil
  • 400 ml cold water
  • 1 tbs sherry vinegar (or any light vinegar)
  • pinch of kosher salt
  • pinch of pepper

How to prepare

Peel the cucumber, drop the white bread into 1 cup of water. Cut the seed from bell pepper. Chop the vegetables to small pieces. Put all the vegetables into the blender, add the soaked bread, the sherry vinegar,  the olive oil, and the remained water. Blend it creamy. Spice it with kosher salt and pepper. Serve with chopped serrano ham and roasted bread.
