Cold reserved eggplant creamy soup, only 30 minutes!

The eggplant are lacks many of the kitchen, but why? You can be create varied and delicious dishes from it. At least it is very healthy, because it has high fiber content and the content of soluble carbohydrates is very low, therefore it is ideal for diabetic patients. It has lot of phytonutrients and trace elements can also be found, which is essential for the healthy functioning of our body. Buy more eggplant, and make it healthy dishes like the following soup, that should be be served cold!

Cold reserved eggplant creamy soup, made with sous vide

Foreword

This soup should be prepared one day before consumption, because if it resting one day, and chilled, it will be much finer, softer taste!

Ingredients for 4 persons

Preparation

Set the sous vide machine temperature to 82 °C (180 F). Wash the eggplant thoroughly, cut away green part of the stem, then cut in half lengthwise. Lubricate the half cutted inside part two or three times with olive oil. If you want to do a piquant soup, fry the eggplant crust over a gas stove, so it will be smoky taste. Add a pinch of salt to the inside part and then place into vacuum bag and seal it. Place the sous vide bath 25 to 30 minutes.

Once cooked, pour into blender with it's juice (or a container, than you can use your hand blender to blend it), add the remaining olive oil, water, lemon juice, parsley, sour cream, pepper, and blend until creamy. In the end, season with salt and place in the fridge for 24 hours. During cooling, it will be thickle and the ingredients become harmonious flavors.

Serve with crouton (toasted bread cubes), chopped parsley and olive oil. If you like spicier, drop some chili flakes into the soup.
