Piquant tomato soup, only in half an hour!

Go beyond the flour tasted, suffocating tomatosoup. The following recipe offers an alternative, and I can tell you that it was extremely tasty!

Tomato and heavy cream?

Yes! At first, the recipe is probably surprising, because the tomatoes and heavy cream can not imagine many people together. Yet they complement each other very well! The result of the cooked tomato taste sweet and silky cream will taste excellent pass.

Ingredients for 4 persones

  • 500 g fresh tomato
  • 1 tbs cornstarch
  • 4 - 5 tbs extra virgine oliveoil
  • 1 tbs dried basil or ½ bunch of fresh basil
  • 300 ml boiled water
  • 100 ml heavy cream (form vegetarians, use almond cream )
  • 1 tbs brown sugar
  • pinch of salt
  • 5 g grated parmesan cheese

Preparation

Set the sous vide machine to 82 °C (~ 180 F). Cut the tomatoes in eights, and put it to the vaacum bag. Add the corn starch, 2 tablespoon olive oil, and the basil to the tomatos, then remove the air with vaacum machinefrom the bag. Put the bag into sous vide bath for ½ hour. Once the tomato let out juice, pour the contents of the bag to a blender, and pulse to blend. Then add the boiled water, brown sugar, the remaining olive oil and a pinch of salt during continuous blending. If it is too sweet add a pinch of salt. When done, pour the heavy cream into the mixture, and carefully stir. Serve hot, sprinkled with Parmesan cheese on top and olive oil.
