Light and easy to prepare lunch: roasted chicken breast with zucchini sauce

A grilled chicken breast has a big drawback: it is dries quickly and it will be like a shoe sole. However, no one likes to chew soles. Instead, cook sous vide machine for the first time and just fry it in the end! Only 45 minutes preparation time, and the tasty and healthy dinner is ready!

Ingredients for 4 persones

  • 1 large fillets chicken breast without skin
  • 1 medium size zucchini
  • 2 spring onions
  • 200 ml yoghurt
  • 100 ml heavy cream
  • 100 g grated hard cheese (like gouda, maasdamer, grand panado)
  • 2 tbs olive oil
  • 1 tbs cornstarch
  • pinch of kosher salt and pepper

Preparation

Set the sous vide machine temperature to 54 °C (130 F). Cut to half the chicken breast then sprinkle with salt all part. Place the breasts into vacuum bag, pour the oliva oil to the breasts, then vacuum and close the bag. Drop the bag into the sous vide bath for 45 minutes. Chop the spring onions onto tiny pieces, slice up the zucchini to 1 x 1 cm large cubes.

Heat a little olive oil to medium heat, then throw in the chopped spring onions and salt it. Simmer the spring onions 3 - 4 minutes, then add the diced zucchini. Simmer for a further 5 - 6 minutes. When finished, pour the yogurt, grated cheese and cook for 5 minutes.
Mix the heavy cream and the corn starch, then add to the zucchini sauce. Boil for a few minutes. Remove the chicken breasts from the bag, wipe it dry, then heat up a pan over a high heat and fry on both sides. Cut 1 - 1.5 cm slices the meat. Serve the meat with zucchini sauce and noodles or rice.
